Chef Johns Tortilla de Patatas
Ingredients:
4 medium potatoes, peeled and thinly sliced
1 small onion, thinly sliced
6 large eggs
1/2 cup olive oil
Salt and pepper, to taste
Instructions:
1 Heat olive oil in a non-stick skillet over medium heat. Add the potatoes and onions. Cook gently, stirring occasionally, until tender but not browned. Drain excess oil and let cool slightly.
2 In a bowl, beat the eggs and season with salt and pepper. Add the cooked potatoes and onions to the eggs, mixing gently.
3 Heat a little oil in the skillet over medium heat. Pour the egg mixture into the pan, spreading it evenly.
4 Cook until the bottom is golden and set. Carefully flip the tortilla onto a plate, then slide it back into the pan to cook the other side.
5 Cook for a few more minutes until firm. Remove from heat and let cool slightly. Slice into wedges and serve!
