Pasta de Sardine

Ingredients:

1 lb pasta spaghetti or linguine

1 can 7 oz sardines in oil, drained and mashed

3 cloves garlic, minced

1/4 cup olive oil

1/2 tsp red pepper flakes optional

1/2 cup fresh parsley, chopped

Zest and juice of 1 lemon

Salt and pepper, to taste


Parmesan cheese, for serving optional

Instructions:

1 Cook the pasta according to package instructions. Drain, reserving 1/2 cup of pasta water.

2 While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, cooking for 1 minute until fragrant.

3 Add the mashed sardines to the skillet and cook for 2-3 minutes, breaking them apart and combining them with the garlic.

4 Add the cooked pasta to the skillet, tossing to combine. If the pasta is too dry, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.

5 Stir in the fresh parsley, lemon zest, and lemon juice. Season with salt and pepper to taste.

6 Serve hot with a sprinkle of Parmesan cheese, if desired.
