Better Spanish Rice
Ingredients:
1 1/2 cups long-grain rice
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 1/2 cups tomato sauce
2 1/2 cups chicken broth
1 tsp paprika
1/2 tsp cumin
1/4 tsp chili powder
Salt and pepper, to taste
1/2 cup frozen peas optional
Fresh parsley, chopped for garnish
Instructions:
1 Heat olive oil in a large saucepan over medium heat. Add the onion, garlic, and bell pepper, cooking until softened, about 5 minutes.
2 Stir in the rice, cooking for 2-3 minutes until the rice begins to toast slightly.
3 Add the tomato sauce, chicken broth, paprika, cumin, chili powder, salt, and pepper. Stir to combine and bring the mixture to a boil.
4 Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
5 Stir in the peas if using and cook for an additional 2 minutes.
6 Remove from heat, fluff with a fork, and garnish with fresh parsley before serving.
