Spanish Gazpacho
Ingredients:
6 ripe tomatoes, chopped
1 cucumber, peeled and chopped
1 red bell pepper, chopped
1 small red onion, chopped
2 cloves garlic, minced
1/4 cup olive oil
2 tbsp red wine vinegar
1 1/2 cups cold water
1 slice stale bread optional, for thickness
Salt and pepper, to taste
Fresh parsley or basil for garnish
Instructions:
1 In a blender or food processor, combine the tomatoes, cucumber, bell pepper, onion, and garlic. Blend until smooth.
2 Add the olive oil, red wine vinegar, and bread if using. Blend again until fully incorporated.
3 Gradually add the cold water, blending until you achieve your desired consistency.
4 Season with salt and pepper to taste, then chill the gazpacho in the refrigerator for at least 1 hour.
5 Serve cold, garnished with fresh parsley or basil.
