Mexican Baked Fish
Ingredients:
4 white fish fillets such as tilapia or cod
2 tbsp olive oil
1 lime, juiced
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp cayenne pepper optional
Salt and pepper, to taste
1/4 cup fresh cilantro, chopped
1 small red onion, finely sliced
1/2 cup salsa or diced tomatoes
Fresh lime wedges for serving
Instructions:
1 Preheat the oven to 400F 200C.
2 Place the fish fillets on a baking dish lined with parchment paper. Drizzle with olive oil and lime juice.
3 In a small bowl, combine chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Sprinkle the spice mixture over the fish fillets evenly.
4 Top the fish with slices of red onion and a few spoonfuls of salsa or diced tomatoes.
5 Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
6 Garnish with fresh cilantro and serve with lime wedges.
