MeMes Pasta Fagioli
Ingredients:
2 tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1 medium carrot, diced
1 celery stalk, diced
2 15 oz cans cannellini beans, drained and rinsed
1 14.5 oz can diced tomatoes
4 cups vegetable broth
1 tsp dried oregano
1/2 tsp dried thyme
1/2 cup ditalini pasta or any small pasta
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
Grated Parmesan cheese, for serving optional
Instructions:
1 Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery, cooking until softened about 5 minutes.
2 Stir in the cannellini beans, diced tomatoes, vegetable broth, oregano, thyme, salt, and pepper. Bring to a boil.
3 Add the pasta, reduce heat, and simmer for about 10-12 minutes until the pasta is tender.
4 Stir in fresh parsley and adjust seasoning as needed.
5 Serve hot with Parmesan cheese, if desired. Enjoy!
