Pesto Pasta Caprese Salad
Ingredients:
12 oz rotini or bow tie pasta
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls, halved
1/4 cup fresh basil leaves, chopped
1/2 cup homemade or store-bought pesto
1 tbsp olive oil optional for extra richness
Salt and pepper, to taste
Balsamic glaze optional, for drizzling
Instructions:
1 Cook the pasta according to package instructions. Drain, and set aside to cool.
2 In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and fresh basil.
3 Add the pesto and toss to coat everything evenly. If desired, drizzle with olive oil for extra richness.
4 Season with salt and pepper to taste.
5 Serve chilled or at room temperature, drizzling with balsamic glaze for an extra pop of flavor optional.
