Antipasto Pasta Salad
Ingredients:
12 oz rotini or bow tie pasta, cooked and cooled
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup black olives, sliced
1/4 cup green olives, sliced
1/2 cup roasted red peppers, chopped
1/2 cup mozzarella balls or cubes
1/4 cup pepperoncini, sliced
1/2 cup Italian dressing store-bought or homemade
1 tbsp olive oil optional
Salt and pepper, to taste
Fresh basil, chopped for garnish
Instructions:
1 Cook the pasta according to package instructions. Drain and cool under cold running water.
2 In a large bowl, combine the cooked pasta with cherry tomatoes, red onion, olives, roasted red peppers, mozzarella, and pepperoncini.
3 Drizzle with Italian dressing and olive oil, then toss until evenly coated.
4 Season with salt and pepper to taste.
5 Garnish with fresh basil and chill in the refrigerator for at least 1 hour before serving. Enjoy!
