Shrimp Pasta Salad
Ingredients:
12 oz rotini or elbow pasta, cooked and cooled
1 lb cooked shrimp, peeled and deveined
1/2 cup celery, finely chopped
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/2 cup mayonnaise
2 tbsp lemon juice
2 tbsp Dijon mustard
1 tsp garlic powder
Salt and pepper, to taste
1/4 cup fresh parsley, chopped
1 tbsp olive oil optional
Instructions:
1 Cook the pasta according to package instructions. Drain and rinse under cold water. Set aside to cool.
2 In a large mixing bowl, combine the cooked pasta, shrimp, celery, red bell pepper, and red onion.
3 In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
4 Pour the dressing over the pasta mixture and toss to coat evenly.
5 Drizzle with olive oil if desired and toss again.
6 Garnish with fresh parsley and chill in the refrigerator for at least 30 minutes before serving. Enjoy!
