Chicken Club Pasta Salad
Ingredients:
12 oz rotini or penne pasta, cooked and cooled
2 cups cooked chicken breast, diced
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/2 cup cooked bacon, crumbled
1/4 cup red onion, thinly sliced
1/2 cup shredded cheddar cheese
1/2 cup mayonnaise
2 tbsp ranch dressing
1 tbsp Dijon mustard
Salt and pepper, to taste
2 tbsp fresh parsley, chopped optional for garnish
Instructions:
1 Cook the pasta according to package instructions. Drain and cool under cold water.
2 In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, crumbled bacon, red onion, and shredded cheddar cheese.
3 In a separate bowl, mix together the mayonnaise, ranch dressing, Dijon mustard, salt, and pepper.
4 Pour the dressing over the pasta salad and toss until evenly coated.
5 Garnish with fresh parsley if desired and chill in the refrigerator for at least 1 hour before serving. Enjoy!
