Pasta alla Vodka
Ingredients:
12 oz penne or rigatoni pasta
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1/2 cup vodka
1 15 oz can tomato sauce
1/2 cup heavy cream
1/4 tsp red pepper flakes optional
Salt and pepper, to taste
1/4 cup fresh basil, chopped
1/2 cup grated Parmesan cheese
Instructions:
1 Cook the pasta according to package instructions. Reserve 1/4 cup of pasta water and drain the rest.
2 In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and golden.
3 Add minced garlic and cook for 1 more minute, until fragrant.
4 Pour in the vodka and cook for 2-3 minutes, allowing the alcohol to evaporate.
5 Stir in the tomato sauce and red pepper flakes. Simmer for 10 minutes, letting the sauce thicken.
6 Lower the heat and stir in the heavy cream, simmering for another 3-5 minutes.
7 Add the cooked pasta to the sauce, toss to combine, and use reserved pasta water to loosen if necessary.
8 Season with salt, pepper, and fresh basil. Serve with grated Parmesan and enjoy!
