Spanish Moroccan Fish
Ingredients:
4 white fish fillets such as cod or haddock
2 tbsp olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 red bell pepper, sliced
1 tbsp ground cumin
1 tsp paprika
1/2 tsp turmeric
1/4 tsp cinnamon
1 can 14 oz diced tomatoes
1 cup vegetable broth
1/2 cup green olives, pitted and sliced
Salt and pepper, to taste
Fresh cilantro, chopped for garnish
Instructions:
1 In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and red bell pepper, and sauté for 5 minutes until softened.
2 Stir in the cumin, paprika, turmeric, and cinnamon, and cook for another 2 minutes until fragrant.
3 Add the diced tomatoes and vegetable broth to the skillet. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
4 Season the fish fillets with salt and pepper, and place them in the skillet. Cover and simmer for 8-10 minutes, or until the fish is cooked through and flakes easily.
5 Stir in the green olives and cook for another 2 minutes.
6 Garnish with fresh cilantro before serving.
