Spaghetti Squash

Ingredients:

1 medium spaghetti squash

2 tbsp olive oil

2 cloves garlic, minced

1 cup marinara or Alfredo sauce optional

Salt and pepper, to taste

Fresh parsley or basil, for garnish

Grated Parmesan cheese optional


Instructions:

1 Preheat your oven to 400F 200C.

2 Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the flesh with olive oil, and season with salt and pepper.

3 Place the squash halves cut side down on a baking sheet lined with parchment paper. Bake for 35-45 minutes, or until tender.

4 Once cooked, use a fork to scrape the flesh into spaghetti-like strands.

5 Heat the remaining olive oil in a skillet over medium heat. Sauté the minced garlic until fragrant, then toss in the spaghetti squash strands.

6 Add sauce if desired, toss until heated through, and garnish with fresh parsley or basil and Parmesan cheese. Serve warm and enjoy!
