Ingredients:

1 cup cooked rice or pasta

1 cup cream of chicken soup

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped or 1 cup frozen spinach, thawed and drained

2 cups cooked chicken, shredded or diced

1 cup breadcrumbs for topping

2 tbsp olive oil for breadcrumbs

1 cup sour cream

1 cup onion, chopped

2 cloves garlic, minced

1 tsp garlic powder

1 tsp dried Italian seasoning

1 tsp salt

1 tsp black pepper


Instructions:

1. Prepare the Oven:

Preheat your oven to 350F 175C and grease a 9×13-inch baking dish.

2. Mix the Casserole Filling:

In a large mixing bowl, combine cooked chicken, chopped spinach, cream of chicken soup, sour cream, half of the cheddar cheese, cooked rice or pasta, chopped onion, minced garlic, garlic powder, salt, black pepper, and Italian seasoning. Stir everything until well blended.
