Easter Breakfast Casserole

Ingredients:

6 large eggs

1 cup milk

1 tsp salt

1/4 tsp black pepper

2 cups diced cooked chicken or turkey can substitute with vegetarian option

1 cup diced bell peppers red and green

1 cup diced onion

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

1 1/2 cups frozen hash browns, thawed


Fresh parsley for garnish

Instructions:

1 Preheat your oven to 350F 175C and grease a 9×13-inch baking dish.

2 Layer the thawed hash browns evenly in the bottom of the dish.

3 In a mixing bowl, whisk together eggs, milk, salt, and pepper.

4 Add diced chicken or turkey, bell peppers, and onion to the bowl and mix well.

5 Pour the egg mixture over the hash browns in the baking dish.

6 Top with shredded mozzarella and cheddar cheese.

7 Bake for 40-45 minutes, or until the casserole is set and golden brown on top.

8 Garnish with fresh parsley before serving.
