Baked Oatmeal Breakfast Bars
Ingredients:
2 cups rolled oats
1/2 cup almond milk or any milk of choice
2 large eggs
1/4 cup honey or maple syrup
1/2 cup unsweetened applesauce
1/2 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1/4 cup raisins or dried cranberries
1/4 cup dark chocolate chips optional
Instructions:
1 Preheat your oven to 350F 175C and line an 8×8-inch baking dish with parchment paper.
2 In a large bowl, whisk together oats, milk, eggs, honey or maple syrup, applesauce, vanilla extract, cinnamon, baking powder, and salt until well combined.
3 Stir in raisins, dried cranberries, and chocolate chips, if using.
4 Pour the mixture into the prepared baking dish and spread evenly.
5 Bake for 25-30 minutes or until the bars are golden and firm in the center.
6 Let cool before cutting into squares.
