Jumbo Breakfast Cookies
Ingredients:
1 1/2 cups rolled oats
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup unsweetened applesauce
1/4 cup maple syrup or honey
1 large egg
1/4 cup almond butter or nut/seed butter of choice
1/4 cup chopped dried fruit raisins, cranberries, etc.
1/4 cup chopped nuts optional
1/4 cup dark chocolate chips optional
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a large bowl, mix together oats, flour, baking soda, cinnamon, and salt.
3 In a separate bowl, whisk together applesauce, maple syrup or honey, egg, and almond butter.
4 Add the wet ingredients to the dry ingredients and stir until fully combined.
5 Fold in dried fruit, nuts, and chocolate chips if using.
6 Scoop large spoonfuls of dough and place them on the baking sheet, pressing slightly to flatten.
7 Bake for 12-15 minutes or until golden on the edges.
8 Let cool before enjoying a delicious and hearty breakfast!
