Eggs Benedict Breakfast Pizza
Ingredients:
1 pizza dough store-bought or homemade
4 large eggs
1 cup hollandaise sauce prepared or homemade
1/2 cup spinach leaves optional
1/4 cup diced tomatoes
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 cup shredded mozzarella cheese
1 tbsp olive oil
Instructions:
1 Preheat your oven to 425F 220C and prepare a baking sheet or pizza stone. Roll out your pizza dough to your desired thickness.
2 Drizzle olive oil over the dough and sprinkle with garlic powder, salt, and pepper. Bake for 8-10 minutes, or until the dough is lightly golden.
3 While the pizza dough is baking, cook the eggs to your preferred style: poached eggs are the traditional choice, but scrambled or fried also work.
4 Once the dough is ready, sprinkle shredded mozzarella cheese evenly on top and bake for an additional 2-3 minutes until the cheese is melted and bubbly.
5 Remove from the oven and drizzle with hollandaise sauce.
6 Top with spinach leaves, diced tomatoes, and cooked eggs.
7 Serve warm and enjoy a delicious twist on classic Eggs Benedict!
