Pasta Salad with Homemade Dressing
Ingredients:
8 oz cooked pasta any type
1 cucumber, diced
1 bell pepper, diced
1/2 red onion, thinly sliced
1 cup cherry tomatoes, halved
1/4 cup chopped fresh parsley
For the dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
Salt and pepper, to taste
Instructions:
1 Cook pasta according to package instructions, then rinse and drain under cold water.
2 In a large bowl, combine cooked pasta, cucumber, bell pepper, red onion, cherry tomatoes, and parsley.
3 For the dressing, whisk together olive oil, vinegar, Dijon mustard, garlic, salt, and pepper.
4 Pour the dressing over the pasta salad and toss to coat evenly.
5 Chill in the refrigerator for at least 30 minutes before serving.
