Sicilian Anchovy Pasta

A bold and flavorful pasta dish inspired by Sicilian cuisine!

Ingredients:

12 oz spaghetti

1/4 cup olive oil

4 garlic cloves sliced thin

6-8 anchovy fillets packed in oil, drained

1/4 tsp red chili flakes optional

1/4 cup pitted black or green olives sliced

2 tbsp capers rinsed and drained

1/2 cup cherry tomatoes halved

1/4 cup parsley chopped


Lemon zest from 1 lemon

Grated Parmesan or Pecorino cheese optional

Instructions:

Cook the spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.

Heat the olive oil in a large skillet over medium heat.

Add the garlic and anchovy fillets to the skillet, stirring until the anchovies dissolve and the garlic is fragrant about 2 minutes.

Stir in the chili flakes if using, olives, capers, and cherry tomatoes. Cook for another 2-3 minutes.

Add the cooked spaghetti to the skillet, tossing to coat in the sauce. If needed, add reserved pasta water a little at a time to create a silky texture.

Stir in the chopped parsley and lemon zest. Adjust seasoning with salt and pepper if necessary.

Serve hot, topped with grated cheese if desired.
