Skillet Burrito Bowl

A quick and tasty one-pan meal with all your favorite burrito fillings in a bowl!

Ingredients:

1 lb ground beef or chicken

1 tbsp olive oil

1 packet taco seasoning

1 cup cooked rice

1 cup black beans drained and rinsed

1 cup corn kernels fresh, frozen, or canned

1/2 cup diced tomatoes

1/4 cup chopped green onions

1/2 cup shredded cheddar cheese


1/4 cup sour cream or Greek yogurt

Fresh cilantro for garnish

Lime wedges for serving

Instructions:

Heat the olive oil in a large skillet over medium heat. Add the ground meat and cook until browned, breaking it apart as it cooks.

Stir in the taco seasoning, followed by a splash of water according to seasoning packet instructions. Mix well and simmer for a few minutes.

Add the rice, black beans, corn, and diced tomatoes to the skillet, stirring to combine.

Top with shredded cheddar cheese and let it melt, about 2 minutes.

Remove from heat, garnish with green onions and fresh cilantro.

Serve with sour cream or Greek yogurt and a wedge of lime. Enjoy!
