Angelas Awesome Enchiladas

A flavorful and cheesy enchilada recipe thats perfect for a satisfying dinner!

Ingredients:

10 corn or flour tortillas

2 cups cooked chicken shredded

1 can 10 oz red enchilada sauce

1 can 4 oz diced green chilies

2 cups shredded cheddar cheese

1/2 cup sour cream optional

Fresh cilantro optional, for garnish


Instructions:

Preheat your oven to 375F 190C. Lightly grease a 9×13-inch baking dish.

In a medium bowl, mix the shredded chicken, green chilies, and 1 cup of the shredded cheese.

Warm the tortillas in the microwave for 15-20 seconds to make them pliable.

Spread a spoonful of enchilada sauce over each tortilla, then add a generous portion of the chicken mixture. Roll up the tortillas and place them seam-side down in the prepared baking dish.

Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining shredded cheese.

Cover with aluminum foil and bake for 20-25 minutes.

Remove the foil, then bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.

Top with sour cream and fresh cilantro if desired before serving.
