Dawns Easy Red Velvet Sandwich Cookies

A sweet, indulgent treat with soft red velvet cookies and a creamy fillingperfect for any occasion!

Ingredients:

For the Cookies:

1 box red velvet cake mix

1/2 cup vegetable oil

2 large eggs

1 tsp vanilla extract

For the Filling:

1/2 cup unsalted butter softened

8 oz cream cheese softened


2 cups powdered sugar

1 tsp vanilla extract

Instructions:

Preheat your oven to 350F 175C.

In a large bowl, combine the red velvet cake mix, vegetable oil, eggs, and vanilla extract. Mix until a dough forms.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper, about 2 inches apart. Flatten the balls slightly.

Bake for 8-10 minutes or until a toothpick inserted into the center comes out clean. Let the cookies cool completely.

For the filling, beat together the butter, cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.

Once the cookies have cooled, spread the filling on the bottom of one cookie and sandwich it with another cookie.

Refrigerate for 30 minutes before serving to allow the filling to set.
