Greek Lemon Chicken and Potato Bake

A zesty and aromatic one-pan meal featuring tender chicken and golden, lemon-infused potatoes!

Ingredients:

4 bone-in, skin-on chicken thighs or breasts

4 medium potatoes cut into wedges

1/4 cup olive oil

1/4 cup fresh lemon juice

1 tsp lemon zest

3 garlic cloves minced

1 tsp dried oregano

1 tsp dried thyme


1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Fresh parsley and lemon wedges for garnish

Instructions:

Preheat your oven to 400F 200C. Grease a large baking dish or sheet pan.

In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and black pepper.

Place the chicken and potato wedges in the baking dish. Pour the lemon mixture over everything, ensuring its well coated.

Arrange the chicken skin-side up and roast for 40-45 minutes, basting the chicken and tossing the potatoes halfway through, until the chicken is golden and cooked through internal temperature of 165F or 74C and the potatoes are tender.

Garnish with fresh parsley and serve with extra lemon wedges for a burst of freshness.
