1 large egg

1/2 teaspoon vanilla extract

For the Cream Cheese Frosting

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

Instructions

Step 1: Prepare the Cupcake Batter

Preheat the oven to 350F 175C and line a cupcake tin with paper liners.

In a medium bowl, whisk together the flour, baking soda, cocoa powder, and salt.

In a large bowl, cream the butter and granulated sugar until light and fluffy about 3 minutes.

Beat in the eggs one at a time, mixing well after each addition.

Add the buttermilk, vanilla extract, red food coloring, and white vinegar, mixing until fully combined.

Gradually incorporate the dry ingredients into the wet ingredients, mixing until smooth.

Gently fold in the chopped strawberries.
