Creamy Spinach and Sun-Dried Tomato Fettuccine Alfredo

Ingredients
300g fettuccine pasta
2 tbsp olive oil 㮝
3 garlic cloves, minced 龍
1 cup heavy cream 拏
1/2 cup grated Parmesan cheese 燎
1/2 tsp chili flakes optional
1 cup fresh spinach leaves
1/2 cup sun-dried tomatoes, chopped
Salt and black pepper, to taste 蓼
Extra Parmesan cheese for garnish 燎
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the fettuccine according to package instructions until al dente.
Reserve 1/2 cup of pasta water, drain the pasta, and set aside.
Step 2: Prepare the Sauce
Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for about 1 minute until fragrant.
Reduce the heat to low and stir in the heavy cream.
Gradually add the grated Parmesan cheese, stirring until melted and smooth.
For a bit of heat, sprinkle in chili flakes optional.
Step 3: Add Spinach and Sun-Dried Tomatoes
Stir in the fresh spinach and allow it to wilt gently in the sauce.
Add the chopped sun-dried tomatoes and mix well.
Step 4: Combine the Pasta
Toss the cooked fettuccine into the skillet with the creamy sauce.
Mix thoroughly, adding the reserved pasta water a little at a time until the sauce reaches your desired consistency.
Step 5: Season and Serve
Season the pasta with salt and freshly cracked black pepper to taste.
Garnish with extra Parmesan cheese and a sprinkle of chili flakes, if desired.
